Mashed Sweet Potatoes - Martha Stewart Recipes

I made these as part of dinner tonight - I did not add the brown sugar though and I used skim milk because that’s what I had. 

My sister has a book club meeting that she needs to make some appetizers for, and that got me thinking about how you could make mashed sweet potatoes into an app.  Possible idea: Make the potatoes as the recipe says, except do not add a lot of salt and add some extra milk/half-and-half.  Then scoop some of the mashed potatoes with a melon baller onto a sheet pan, making cute little lumps.  Then bake for about 20 minutes a la twice baked potatoes, or until they crisp up.  At the end use some fleur de sel salt/or another pretty salt on top as a garnish/seasoning. 

The would not pass the toothpick test, but they would definitely be cute, no?
